During the 2020/21 coffee harvest in Dumerso, Yirgacheffe, three unique protocols of oxygen limitation were employed on small batches of coffee cherry at the Dumerso mill site. Orchestrated with intention and precision by the team at Catalyst Trade, these measures amplify and refract the region's inherent flavor qualities to dizzying heights. This batch, limited to 30 kilograms worldwide, is a blend of all three oxygen-limitation protocols.
